Sauvignon blanc: 409 doz made. From a vineyard in Karridale, 30kms south of Margaret River, 10km east of the Indian Ocean at Hamelin Bay and 10kms north of the Southern Ocean at Augusta. This is a cooler, wetter & cloudier site, reds struggle to ripen, whites are elegant & aromatic. The fruit was left in its picking bins for 3 days until wild yeast kicked off. Juice’s pressed to tank for a solids ferment, then racked to three old barrels (~20%) and tank on fine lees for textural development. Super aromatic, grassy, linear with nuttiness. 11.5%
