Chenin picked from site in the middle of the swan valley, loam over clay soils, vigorous old vines.
Hand picked, crushed and pressed. Fermented on full solids. Bottled at a higher sugar level to leave a touch of residual sugar in the finished product with the aim of disgorging to remove the gushing issues.
Hand disgorged to order. Funky, wild-edged wine of powdery texture, brisk bubbles, green herb and lemon-lime notes going on. Bubbles are broad, vigorous and fresh.
NB: Alcohol must be ordered with food, there are currently government quantity restrictions in place and ID will be requested upon delivery.
